Tangy Couscous Salad

Ingredients

Salad

1 medium zucchini, cut into julienne strips

2 medium tomatoes, diced

1 cup uncooked couscous

2 medium carrots, cut into julienne strips

½ red pepper, diced 4 green onions, chopped

½ c. black olives

Mix together and toss with dressing.

Dressing

¼ c. oil

1 tsp Benjamin Twiggs Cherry Honey Mustard

¼ tsp salt

¼ tsp pepper

Directions

Salad

Mix together and toss with dressing.

Dressing

Whisk together. Chill 1 to 2 hours before serving.
