These Cherry White Chocolate Scones are tender, fluffy, and packed with juicy cherries and creamy white chocolate.
Ingredients
- 2½ cups all purpose flour
- 1 tbsp baking powder
- ½ tsp kosher salt
- 2 tbsp granulated sugar
- 12 tbsp cold butter grated
- 1 cup buttermilk
- 1 egg
- 1 tsp vanilla
- 1⅓ cup fresh or frozen cherries pitted
- 1 cup white chocolate chips
For the Cherry Glaze
- 1 cup powdered sugar
- 2 tsp fresh cherry juice (4-5 fresh or thawed cherries)
Instructions
- Mix together your dry ingredients of 2½ cups flour, 1 tbsp baking powder ½ tsp salt and 2 tbsp granulated sugar.
- With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a mealy texture.
- In a separate bowl, whisk together 1 egg, 1 cup buttermilk and 1 tsp vanilla. Add to the bowl of dry ingredients and mix until just combined.
- Fold in cherries & 1 cup of white chocolate chips. If dough seems too dry, add 1 tbsp more of buttermilk until it is just sticky enough to stick to your hands. Spread into a circle onto a baking sheet and cut into serving sizes, the same way you would a pizza.
- Bake at 350 degrees F for 15-20 minutes or until lightly golden on edges.
For the Cherry Glaze:
- Crush the fresh or thawed cherries in a bowl with the back of the spoon until you have 2-3 tsp of cherry juice. Discard the flesh (enjoy a snack!)
- Add 1 cup of powdered sugar to the bowl of cherry juice, stir until smooth and drizzle over cooled scones.
